1. The ”Blue Smoke” Standard
The biggest mistake amateur smokers make is ”white smoke.” If your smoker is belching thick, white clouds, your meat will taste like an ashtray. You are looking for ”Thin Blue Smoke”—a faint, shimmering wisp that is almost invisible.
This indicates a clean-burning fire with plenty of oxygen. To achieve this at home, make sure your wood is seasoned (dry) and that you haymakerbbq aren’t choking your vents. A clean fire leads to a clean flavor, allowing the natural sweetness of the wood to enhance the beef.
2. The Rest is as Important as the Cook
